Low fat
pie crust
The National
Institute of Health offers the
following low oil, low fat pie
crust on their website. We
haven't tried it yet, but it
sounds like it would work well
with pumpkin pie as well as some
others…
Ingredients:
1 cup quick oats
¼ c whole wheat flour
¼ cup ground almonds
2 TBSP brown sugar
¼ tsp salt
3 TBSP vegetable oil
1 TBSP water
Preheat your oven to 425º
Mix the oats, flour, ground
almonds, sugar and salt together
in a mixing bowl.
In a measuring cup or small
bowl, blend the oil and water
together with a small whisk or
fork. This may take several
minutes.
Add the oil & water mixture to
the dry ingredients until it
will hold together (you may need
to add a sprinkle more of
water).
Spray a pie pan with cooking
spray and press the crust into
it.
Bake it at 425 for 8-10 minutes
until it is lightly golden
brown.
Makes one bottom crust for a 9
inch pie.
